Rustic Pimento Cheese Recipe

  • 2 cups shredded extra-sharp Cheddar cheese
  • 8 ounces cream cheese, softened
  • 1/2 cup mayonnaise
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon crushed red pepper (optional)
  • 1/4 teaspoon onion powder
  • 1 jalapeno pepper, seeded and minced (optional)
  • 1 (4 ounce) jar diced pimento, drained
  • salt and black pepper to taste

Place the Cheddar cheese, cream cheese, mayonnaise, garlic powder, cayenne pepper, onion powder, minced jalapeno, and pimento into the large bowl of a mixer. Beat at medium speed, with paddle if possible, until thoroughly combined. Season to taste with salt and black pepper.


Egg Salad Using the Instant Pot

  • 8-12 Eggs
  • 1/3 cup Mayo
  • 1/4 cup diced celery
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Ready In 10 min

  1. Lightly coat a round baking/casserole dish (make sure it fits in your IP) with cooking spray.  Crack the eggs into the dish.
  2. Place trivet in the bottom of the Instant Pot and add 1 cup of water to the pot.  Place the baking dish of eggs on the trivet and seal the lid.
  3. Cook using manual pressure for 5 minutes.  Manually release steam when cycle completes.  Remove dish from the pot and slide the egg loaf onto a large cutting board.
  4. Chop eggs.  In a large bowl, combine eggs, mayo, celery, salt, and pepper.  Refrigerate until ready to serve.
